Made in the traditional method of champagne, individually fermented in this bottle. Apple and tropical fruits on the nose. Citrus turning to honey and caramel with a nice acid balance and small beads.

Made using an innovative take on the Ripasso technique, most of the grapes are vinified at harvest, the rest are set aside to partially dry. In January they are blended and undergo a secondary fermentation. Taste and enjoy!
